👩🍳 My Homemade Toasted Granola Recipe
Ingredients
- 6 cups organic old fashioned rolled oats
- 2 cups organic roasted pumpkin seeds
- 2 cups organic shredded coconut (optional)
- 1 cup brown sugar
- 1 1/4 cups organic maple syrup
- 3/4 cup organic, unfiltered coconut oil
- 1/3 cup clean, filtered water
- 1 T Redmonds salt
Instructions
- Preheat oven to 325F (slow bake makes it caramelize better).
- Lightly grease 2 stainless steel cookie sheets with avocado oil; set aside.
- In a large bowl, combine oats, pumpkin seeds, coconut and brown sugar.
- In a separate bowl, combine maple syrup, oil, water and salt.
- Pour liquid mixture over oat mixture and combine well. Transfer onto cookie sheets and spread out evenly.
- Bake 45-55 minutes flipping granola midway through to achieve even color. Bake until golden brown.
- Remove from oven and leave to cool completely.
- Transfer into air-tight glass containers (like mason jars). Store in pantry. Good for up to 2 months.
